My Journey
Welcome to my page! About seven years ago, I found myself at a crossroads. I had really let myself go, reaching a weight of nearly 300 lbs with a cholesterol of 287 and was grappling with several chronic diseases, including pre-diabetes, heart disease, and fatty liver among others. It was a daunting reality, and the thought of taking medication was not an option I was willing to consider.
Instead of succumbing to the prescriptions and the bleak outlook from my doctors, I made a bold decision: I chose to heal myself through diet. This particular diet redefined my relationship with food. I embarked on a journey that would lead me to effortlessly drop 115 lbs in just five months, lower my cholesterol to 98! And rid myself of all those chronic diseases!
Now, before I dive into the specifics of my approach, I want to emphasize that I am not a doctor. I am simply a person who found a way to reclaim my health and vitality. My journey is a testament to the power of determination and the incredible impact that food can have on our lives. Always remember to do what works for you, as every individual’s path to wellness is unique.
So, what did I do? It might sound simple, but I cut out meat, dairy, and free oils from my diet. That’s it! It was a liberating decision that opened the door to a world of delicious, nourishing foods. Instead of focusing on what I couldn’t eat, I embraced the abundance of what I could! My meals became vibrant and satisfying, filled with wholesome ingredients that fueled my body and spirit.
Today, I mostly enjoy staples like potatoes, rice, beans, pastas, breads, fruit and vegetables, giving me the energy I needed to thrive. I discovered that eating healthily doesn’t mean sacrificing flavor or enjoyment. In fact, it’s quite the opposite! The joy of cooking and experimenting with new recipes became a delightful part of my daily routine. On the rare occasion that I do eat animal protein and by rare, I mean once or twice a year, it usually comes in the way of fish. So, I guess you can call me Mostly vegan? The majority of the time I consume a high starch (high carb) diet, naturally low in fat, accented with fruits and veggies. And I still avoid highly processed man-made food, dairy and oil! At the age of 57, this approach has changed my life!
